BRUNSWICK® NUTTY FILLET RICE PILAF

Makes 5 Time To Table 40 min

Ingredients

  • 2 cans BRUNSWICK® SEAFOOD SNACKS IN LEMON & CRACKED PEPPER SAUCE
  • 2 tbsp / 30 mL olive oil
  • 2 tbsp almonds, sliced or slivered
  • 1/3 cup onion, chopped
  • 1/3 cup celery, chopped
  • 1/2 cup mushrooms, sliced, fresh
  • 1 tsp garlic, minced
  • 1 cup long grain brown rice
  • 2 cups / 500 mL low sodium chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp red bell pepper, finely chopped

Directions

  1. Heat oil in a large saucepan. Add almonds and toast very lightly over medium heat.
  2. Add onion, celery, mushrooms, garlic, rice and chicken broth. Bring to a boil, cover, reduce heat and cook for 25 minutes (or according to rice package directions), until liquid has evaporated.
  3. Gently stir in parsley, red pepper and BRUNSWICK® SEAFOOD SNACKS. Heat through uncovered for an additional 5 minutes.
  4. Serve immediately.

Tips:

Pilaf is long grain rice cooked with vegetables in a broth (1 part rice & 2 parts liquid) on medium heat, covered and left to simmer until the liquid is completely evaporated.

Use a sprig of rosemary and green beans as garnish, if you desire.
